Chef Matt Vawter grew up cooking in Summit County, sharpened his craft over years at Denver's acclaimed Fruition, then came home to open Rootstalk in December 2020. Less than four years later, in June 2024, he won the James Beard Foundation's Best Chef: Mountain award — the first ever for a Breckenridge chef.
The restaurant occupies a historic home on North Main Street, and the intimate dining room suits the cooking: a seasonally driven New American menu of refined, ingredient-focused dishes that shift with what the region offers.
Rootstalk anchors a small local restaurant group that includes Radicato, Vawter's Italian-leaning sister restaurant up the street. Tables in the little house go quickly, so reservations are strongly recommended.
