Chef Michael Erickson's passion for food was sparked at a young age baking with his grandmother. He earned his bachelor's degree in culinary management from the International Culinary School at The Art Institute of Atlanta and spent three months studying and working in Italy, apprenticing in local restaurants from Umbria to Paris and Switzerland.

After returning to the United States, he worked at the Ritz-Carlton in Atlanta and at Restaurant Eugene, one of the finest restaurants in Atlanta, where he met local farmers and fishermen and grew to respect the simple beauty in the produce and meats we all cook with each day. At Colleta, an Italian restaurant in Atlanta, he developed expertise with wood fire ovens, rotisseries and grills, and started an in-house vinegar and pickling program while learning whole hog butchering and in-house charcuterie.

Michael brought his family to Colorado in 2015 and is excited to be back at Hotel Boulderado, where he first worked upon arriving, to bring his knowledge and passion forged since his grandmother's kitchen to offer the best experience he can.
