We’re a full-service food trailer serving up restaurant-quality meals with heart, hustle, and a whole lot of flavor. Led by Chef and Owner A. Jay, we bring fine-dining experience to the streets—and to your events—across the San Luis Valley.

A. Jay has been working in kitchens since he was 15, mastering every position from dishwasher to Culinary Director. Before launching the trailer, he ran multiple restaurants in Denver and most recently served as the Culinary Director for a large restaurant group. After relocating with his family to the Valley, he decided it was time to build something of his own—something that reflected his passion for people, food, and doing things the right way.

Our Philosophy A. Jay has a few simple but powerful mottos that guide everything we do:

• Clean more than you cook. (Take a peek inside the trailer—you’ll see what we mean.)
• Remake it if it’s not right. (Every plate should make you proud.)
• Don’t serve anything you wouldn’t eat.
• Serve others graciously.

Where to Find Us In the summer months, you can find us parked along the Conejos River on the south side of Antonito. It’s the perfect spot to grab a meal and stay awhile—or even book for a private riverside event.

In the off-season, keep an eye out for our white trailer as we pop up around the Valley, bringing comfort and creativity to every stop.
