PARC Aspen
PARC Aspen is an award-winning fine dining restaurant in the heart of Aspen, Colorado, brought to life by proprietors Maryanne and Harley Sefton. Without prior hospitality experience, they were driven by a deep passion to preserve the local identity of Aspen's dining scene. At the core of PARC Aspen is a commitment to seasonality and sourcing, with ingredients thoughtfully selected from Colorado farms and purveyors whenever possible.

Under the direction of Executive Chef Stefano Schiaffino, the menu blends French discipline with his Peruvian heritage and global experience. Signature dishes include the 11-Year Bourbon Smoked Elk Loin, Mushrooms & Polenta, and Foie Gras Chaud Froid, each plate crafted with precision, creativity, and deep respect for ingredient integrity. From Cast Iron–Seared Steaks to Organic Salmon and Elk Loin, the menus highlight Colorado's seasonal ingredients with a refined, worldly perspective.

Complementing the cuisine is one of the most distinguished wine programs in Aspen, led by Wine & Beverage Director John Mckenna. Recipient of Wine Spectator's Best of Award of Excellence three years running, the list features more than 1,300 curated labels from iconic estates and emerging producers worldwide, highlighting Champagne, Bordeaux, Burgundy, and standout selections from Italy, Spain, and leading American regions. PARC Aspen is a destination for both locals and visitors seeking fine dining that feels sophisticated yet approachable.
