Carboy Winery at Mt. Garfield Estate
In the heart of Colorado's Grand Valley AVA lies Carboy Winery's estate vineyard and tasting room—a high-desert gem sitting at 4,742 feet above sea level. With panoramic views of Mount Garfield and the famed Book Cliffs, this is where soil, sun, and elevation come together to grow something truly special. This is the home of Colorado sparkling wine.

As one of the largest Charmat production facilities outside of California, Carboy Palisade anchors the sparkling program and pushes the boundaries of what's possible in high-elevation winemaking. Whether soaking in the views from the rooftop patio or raising a glass after a ride in true Après Bike style, Carboy Palisade delivers the full spectrum of what makes Colorado wine wild, beautiful, and unforgettable. The 11.5-acre vineyard is composed of silty clay loam soil ideal for growing unique varieties such as Cabernet Franc, Zweigelt, Albariño, and Teroldego.
Since 2016, Carboy Winery has pioneered a new frontier in American winemaking rooted in Colorado's high desert vineyards, with the belief that great wines begin in the vineyard. Through bold experimentation, innovative sparkling programs, and a relentless pursuit of quality, each vintage pushes Colorado wine forward and reveals the remarkable character of this place.
