Black Cat Farmstead
Black Cat Farmstead is an organic farm and award-winning restaurant established in 2006 by Chef Eric Skokan and his wife, Jill. Originally opened as a small neighborhood bistro in downtown Boulder, Black Cat Bistro moved to the Farmstead in Fall 2024 while their sister restaurant Bramble & Hare took over the former downtown space. The operation expresses Front Range Cuisine through the forests, fields and mountains unique to Colorado.

Black Cat Organic Farm stewards over 425 acres growing vegetables, grains, legumes, herbs and flowers, along with heritage pigs and sheep. Instead of sourcing ingredients nationally, the restaurants source most food from their own farm just down the street — artichokes, carrots, Asian greens, parsley, lamb, pork, eggplant, wheat, fava beans and hundreds of other ingredients grown in Boulder County soil.

To support year-round local dining in Colorado's challenging climate, the team preserves an enormous variety of produce: tomatoes become sauces and sun-dried fruit, corn is raised for polenta, pork and lamb are cured into charcuterie, peppers are fermented and sun-dried, and beans are dried for year-round use. The farm saves seeds for planting the following year, rotates fields constantly for soil vitality, and uses pigs for natural weed removal and field fertilization. Bramble & Hare was awarded a Michelin Green Star, honoring extreme commitment to sustainability. The operation also operates a Farm Store (open Wed-Sun), hosts Farmers Market booths in Boulder and Longmont, offers farm dinners and private events, and runs a CSA program.
