Copal Tree Distillery

In July 2018, Copal Tree Distillery began producing Copalli Rum, supporting sustainable agriculture in Southern Belize. Located next to the lodge and its organic farm, the distillery creates premium organic rum in an eco-conscious facility using native heirloom sugarcane.

Our offerings include Copalli White, Cacao, Barrel Rested & 5-Year Aged Rums. White Rum is aged in stainless steel for six months, Cacao Rum is infused with roasted cacao nibs, and Barrel Rested Rum is aged in bourbon barrels for six to eight months.

Copalli Rum is available at our on-site Rum Bar, included in the Farm-to-Table All-Inclusive Package, and can also be purchased at our fly and gift shop. Copal Tree Farms Set on 3,000 acres, Copal Tree Farms is the first certified-organic farm in Belize. All the heirloom sugarcane distilled to make the rum is grown in the farmland surrounding the distillery. You may tour the distillery, where you will be guided through the sugarcane rum-making process of Copalli Rum.

From farm to flask, you’ll experience each step of making single-origin sugarcane rum and learn what makes it unique. Start by touring the organic cane fields and harvesting your own sugarcane, before heading to the on-site distillery to learn the basics of rum-making and its evolution over time. Tour the entire distillery and bottling facility before traveling to the Agricultural Center. Here, experts at Copal Tree Lodge will teach you how to taste spirits correctly and the science behind the practice.
